Another cooking post! I made my first rappie pie with this recipe!

Rappie Pie Cooking

This one will be  chicken, I have seen, clam, lobster, pork, beef, rabbit, pretty much any meat or even veggie!

Rappie Pie

Ingredients:

1 large chicken

3 onions, chopped

12 potatoes or bag of pre grated and squeezed potatoes from the store that I used

salt and pepper

1/4 cup cubed and small pieces of pork fat

1 packet onion soup mix

1/2 tsp-1 tsp fresh savory, or poultry spice

(the bag will have the measurements) Blend the broth with the potatoes fast but in small parts, do not add all at once! Add 2 cups at a time, stirring takes some muscles so be prepared! Season with   1 packet of onion soup mix(taste as adding, don’t add much salt as the pork fat will add lots of salt so go easy). The consistency should be like apple sauce? It should have a bit of a gloss over it.

6. Slice the pork fat and lay on top of the pie raw. You can add some to the bottom as well, but again, don’t over do it.

7. In a large greased pan add half of the potato mixture. Add the chicken,  then top with remaining potato mixture. Place pork fat on top.

8. Bake for 1-2 hours, or until top is uniformly brown.

9. Eat with butter /ketchup /molasses or any other topping you desire.

 

TIPS

Measure out the amount of cups of water in your chicken pot (for Evelinas mix its 16 cups), take a visual note of the amount, so when you boil your stock to mix your potatoes, you have enough boiling stock, you may need to add water

St. Bernards Church Stone| Gilberts Cove Lighthouse Digby, NS

Over our vacation with the kids, we travelled all over Southern Nova Scotia. On a day trip to Digby we stopped along the way to a few tourist spots we have never been. Pictured here is the view of the cove at Gilbert’s Cove Lighthouse. It’s a tiny lighthouse, but there are many areas surrounding to explore, we took a walk down to the beaches to see what we could find. Maddy wanted to bring home half the rocks there 🙂 hehe, and tons of rock for skipping.

Our next stop was along the french shore, I have driven past these churches so many times, yet I have never taken the time to stop in and look at the inside, also online I can find tons of pictures of the outside of St. Bernard Church, like this awesome one:

The outside looks like a massive castle (castle in Nova Scotia? yep!) compared to the houses by it and the inside  is just stunning, like Mike has said, when you walk in, you can feel god there.  There is a greeter at the door who was very pleasant, and allowed us to walk around, I was not sure if I was suspose to take pictures there but nothing was said. Vacation 2011 Fishing in Shelburne, Nova Scotia|Blue Island Sheep

This year I took my vacation/ Birthday and spent it in my home town of Shelburne, NS. We travelled all over, Lockeport, Green Harbor, Barrington, Clarks Harbor, Cape Sable Island and many more little towns I cannot think of.

This picture is of me and Mike at a relatives house, they traded my brother for some rocks he had and made this pretty cool statue of a fisherman! I loved it! I want one on my lawn now! This would also make an awesome geocache!

On my birthday, July 2nd, Mike and the kids came to spend the night at my fathers in Shelburne, NS.  My Dad and my Step Mom are awesome, Flo (my step mom’s nickname)decorated the house with balloons, made us supper(it was not even burnt hehe) and a cake!  Later they arranged for friends of theirs, Jackie and Stew (I think that’s the spelling) to take us all out on a lobster boat fishing and touring islands off Southern Nova Scotia. I hadn’t been on a boat in years (since I was 7 or 8 ) so I was excited. We saw seals, jellyfish, pollock, mackerel, Blue Island where my great grandparents were married, which now it’s only habitant is sheep! It was the perfect night, beautiful weather and everyone had fun. This is the only picture I managed to get of the sheep:

The fishing boat trip was the highlight of my vacation. My family was there, and some amazing new friends. It was awesome. My next task is to make Jackie a bracelet to thank them for the boat trip and mackerel!

Quilting Yarmouth | Nature Quilt | Quilting Club

Wednesday Night at my house in Yarmouth, NS, me and a few friends get together to quilt! We are all learning, some more experienced then others but loving every minute of it.  I started out taking quilting classes at Dayton Fabrics in Hebron as I did not own a sewing machine. Luckily after searching for hours on facebook Yardsale group in Yarmouth I found someone selling an old Singer Simple for $10.00, I freaked and went to pick it up, the machine works beautifully.

Now I just take what I have learned and work on my quilt at home! My favorite tools so far, the rotary cutter, you can get this kit(cutter, extra blade and cutting mat) at Walmart for $19.00. This was my far was a great investment. It’s a little scary and I have almost cut my finger off once or twice, but for cutting fabric squares it’s perfect!

Being a Step Mother | Step Parents

Having a Stepmom – Growing up, I remember first meeting my step mother, my first thought was, she’s nice but weird. She had big glasses, and flashy blue spandex on, and was smoking in my dad’s purple mustang hehe.  The spandex has left, but the weird and niceness never has 🙂 As the years went on, we had so much fun with my dad and step mom. She was so different, funny, she would do weird things, her and my dad teased each other,  she would be random, and stick her feet out the window while driving to make us laugh, or scare the crap out of dad, show us things we had never seen before like how to burn everything on the BBQ to a crisp lol, or how great salt fish is(ick), how to take jokes, how to play them and how to love and accept someone new into you life.  I am very thankful for my step mom.

Being a step mom – I was scared of being involved with kids. I thought I was never good with kids, I was scared of kids because I knew how bad I was as a child lol so kids made me worry.  I am extremely lucky to have amazingly awesome step kids. This Mothers Day I had a few tear ups, as we were driving in the car and out of the blue Maddy asked to have some paper and a pen.  About 10 times she wrote over and over again this:

When I saw it well Mike did first, I almost cried right there. Riley also offered to help me make jewelry and Maddy did the dishes. I am very happy to have the kids in my life and I enjoy the time I spend with them.

From playing PS2 with Riley, Riley and me watching youtube videos, to maddy helping me cook,  or having random tea parties with her animals, I have FUN and I love being a kid again and being a part of their lives.
